1 large egg
½ cup buttermilk
½ cup flour, divided
½ cup cornmeal
1 tsp salt
½ tsp black pepper
3 medium green tomatoes, sliced about ⅓ inch thick
Canola oil for frying
Salt to taste for after frying ( I used finishing salt or kosher salt)

Sliced mozzarella if making caprese.

Combine egg and buttermilk. Set aside
Combine ¼ cup flour, all cornmeal, salt and pepper in shallow plate for dredging
Place ¼ cup flour in shallow plate for dredging

Heat ¼-½ inch of oil in a large skillet and heat to 375º
Dredge tomato slices in flour, then egg, then cornmeal mixture and drop into hot oil in batches.
Fry about 2 minutes per side until golden. Remove to paper towel or rack and sprinkle with kosher or finishing salt.

I was given a bag of green tomatoes one summer and had no idea what to do with them. I googled it! I found this recipe from Southern Living and another serving it as caprese. The combination of warm tomatoes, cold cheese and salt was absolutely amazing!
