Ingredients: 2 tbsp oil, avocado, olive, or vegetable 3 pounds beef chuck, cut into bite size cubes 2 & 1/2 cups of diced yellow onions 2 cups diced celery 2 jalapenos, diced, remove seeds for less spicy chili 1/2 tsp salt 2 cloves garlic, minced 1 package of chili seasoning mix 2 tsp light or dark sugar 1 tsp oregano 1 (28 oz0 can of crushed tomatoes 1 14.5 ounce can diced tomatoes, undrained 1 bay leaf 1/2 cup fresh parsley, minced or finely chopped 1/2 cup fresh cilantro, minced or finely chopped

Directions:in a large skillet, heat oil over a medium-high heat, when hot at meat in a single layer, brown for 1-2 minutes on each side, then move to slow cooker, add a bit more oil to pan if needed
In the same pan, add onions, celery, jalapenos, salt & pepper
Saute until celery is softened and onion is translucent, add garlic and continue to cook for 2 minutes
Add chili seasoning, sugar, & oregano, cook 2 minutes more
Add tomato paste and stir to coat vegetables with tomato paste, add this to the slow cooker
Add crushed tomatoes, diced tomatoes, and bay leaf, stir to combine all the ingredients
Cook for 6-8 hours or until meat is tender
Remove bay leaf, and stir in cilantro & parsley
Serve with desired toppings |
