3 to 5 pork neck bones
1 onion, diced (opt.)
Salt & pepper
8 c. self-rising cornmeal

Directions:
Directions:
Cover neck bones with water. Cook on low overnight. Remove meat from bones; strain broth. Add meat to broth and stir in approximately 8 cups of cornmeal (preferably Jim Dandy white) until very thick. Press into pan and refrigerate overnight. Cut into serving-size slices. Preheat approximately 1/4 inch of oil in heavy pan. Fry slices of scrapple until brown and crisp in each side.
Serve hot, with scrambled eggs or maple syrup.
