˝ c. olive oil

1 c. onion roughly chopped

2 clove of garlic, chopped

1 c. celery, roughly chopped

1 c. carrot, roughly chopped

1 tsp. black peppercorns

1 tsp. salt

4 bay leaves

Fish bones and heads from 6 to 8 fish, rinsed

1 c. white wine

6 c. water

Directions:
Directions:
Heat heavy saucepan over medium heat and then add olive oil, onion, garlic, celery, carrots, peppercorns, and sauté for a few minutes. Add fish bones and heads, and continue to sauté for 5 minutes then add salt, bay leaves, wine and water. Bring to a boil, reduce to a simmer, and cook for 30 minutes and then strain. Use immediately or cover and refrigerate.

Makes 6 cups.
