1 baked pie crust
1 packet unflavored gelatin, dissolved in 1/4 cup cold water.
4 eggs, separated
1 cup sugar, divided
1/2 tsp salt
1/4 tsp lemon juice
1/2 cup Lilikoi (passion fruit) juice
1/4 tsp cream of tartar

Directions:
Directions:
Beat egg yolks until thick. Add 1/2 cup of the sugar, salt, lemon and Lilikoi juices, cooking over medium heat and stirring continuously until custard consistency. Add softened gelatin and stir in. Remove from heat. Chill till partially set. Beat egg whites and cream of tartar until soft peaks form. Beat in remaining sugar, 1 tablespoon at a time. Beat until stiff, then gently fold in lilikoi custard mixture into egg white mixture. Pour into baked and cooled pie crust, and chill until firm. Top with Cool Whip before cutting and serving.
