50 cherries with stems (Maraschino are best)
3 T. soft butter
3 T. light corn syrup
1/2 tsp. salt
2 c. sifted powdered sugar
1 1/2 lbs. chocolate

Directions:
Directions:
Drain cherries on paper towel. Combine butter, salt, corn syrup, stir in sugar, knead until smooth. Chill 15 minutes.

Squeeze 1 1/2 T. of mixture around each cherry with your hands, stems up, set on cookie tray wrapped in wax paper.

Melt the chocolate in double boiler and dip each cherry in and place back on wax paper tray - chill 14 days in refrigerator.

*Do not substitute wax paper with foil or clear wrap, must be wax paper. Do not cheat on 14 days, it takes that time for the mixture to liquify inside the cherry.

This is a fun recipe to do with children. The hard part is waiting two weeks before eating the cherries -- that is if the kids don't eat the cherries during prep. Hint: Buy an extra jar of cherries!
