3 TBL olive oil
2 canned chipotle peppers in adobo sauce, finely chopped
2 TBL adobo sauce from the can
3 TBL honey
1 garlic clove, grated
2 green onions, thinly sliced
Grated zest and juice of 2 limes
1/4 cup tequila (or chicken/veggie broth)
Salt/pepper to taste
Four 6 oz skinless salmon filets
One 8.8 oz bag, microwavable white rice
1/4 cup fresh cilantro

- In a small pitcher or bowl, combine 1 TBL olive oil, chopped chipotle peppers, adobo sauce, honey, garlic, green onions, half of lime zest, half of lime juice, broth and salt/pepper to taste. Whisk until combined.

- Pat salmon fillets dry with paper towel. Season with salt/pepper.

- Heat a large non-stick skillet over medium-high heat and cook the salmon for about 2 min on first side and then flip

- Pour in glaze and reduce the heat to medium-low

- Spoon glaze over the salmon as it finishes cooking (about 4 more minutes)

- Serve with rice
