  • 1 family size tray of boneless skinless chicken thighs

  • 1 onion sliced (rainbows)

  • 6-7 cloves of garlic minced

  • 1 cup soy sauce

  • 1/2 cup vinegar

  • 1/2 cup of coconut milk (make sure to shake the can before using)

  • black pepper to taste

  • vegetable oil

  • Hot pepper (Thai chilis, or denanche, or as a last resort....red pepper flakes)

  1. Cut the chicken thighs into bite sized chunks-set aside

  2. Sautee the garlic and onions in vegetable oil until translucent, add chicken and cook until brown.

  3. Add the remaining ingredients and simmer on medium heat for approximately 30 minutes. Stir occasionally.

  4. Serve over hot rice.

This is definitely an oldie but a goody...and Alissa's infamous go-to dinner. It's easy, quick and delicious. You should always have these ingredients on hand. This always makes me feel better when I am home sick....hope it comforts you that way, too.
