Ingredients: Olive Oil Cooking Spray 2 tsps. Olive Oil 1 lb. Pork Cubed / Stew meat 1/2 Onion chopped 1 tsp. Salt 1/2 tsp. pepper 2 Garlic Cloves diced 2 1/2 lbs. Calabacita sliced 1/4 to 1/2 can Tomato Sauce 1 can of Corn 11 oz. or Cup of frozen or fresh

Directions:Use large pot, spray with cooking oil and set pot on medium-high heat. Add olive oil and cubed pork, stir and brown till nicely browned and cooked. Then add onions, salt and pepper and stir about 2 minutes. Mix in calabacita and stir all ingredients together about 5 minutes or less. Then put in about 3 to 4 cups of water and the tomato sauce. Bring to a boil cover and then set to medium-low heat(3). Cook for about 15 minutes, stir and add salt to taste, usually needs 1/2 tsp to tsp. Continue to cook low(2) until calabacita is slightly tender for about another 15 minutes and add corn. Use the corn water if more water is needed, otherwise drain. Continue to cook on low heat(2) until calabacita is tender and ready.
NOTE: Buy small calabacita which will be tender and with small seeds. Cut the ends of calabacita and then cut in half lengthwise and again and then slice in uniform size. Calabacita will render water and shrink. Once you have made once or twice you can adjust how soupy you would like your dish to be and actually the amount of water. This recipe is really to your preference of salt and water. So taste and enjoy. It really is an easy recipe. It's a one pot meal but great to serve with Spanish Rice! |

Notes: I learned to make this from Mother by just watching. She didnt have a recipe to follow. Mother had a lot of 'Kitchen Wisdom' for everything she cooked. A little more of 'this or that' did not matter as it all was still good. She used what she had as not to waste, so measurements were not of great importance. With this dish and others, you can always add other ingredients to your liking, e.g. tomato, cilantro.
It didnt bother her to have company in the kitchen and she knew I loved this dish. I think she liked having me in the kitchen because when she couldn't reach something in the cabinets she would ask me to get them down, i.e. I was known as the 'Green Giant'. But one thing for sure "THE SMELLS COMING FROM MOTHERS KITCHEN WILL BE REMEMBERED FOREVER".
