Preheat oven to 450º
3 cups uncooked cut-up carrots
18 crumbled soda crackers
2 T. melted butter
2 T minced onion
2/3 cup liquid from cooked carrot water
shredded cheddar cheese

Directions:
Directions:
Boil carrots in salted water until tender, not to well done - reserve 2/3 Cup liquid. Mash carrots stir in butter, onions, crackers and carrot liquid. Put in a 9" X 9" square baking pan and cover with cheese bake at 450 for 15 minutes.

Can be made early in the day. Bake at 325º for 30 minutes or until hot and bubbly.
