Salad:
1 pkg. Rainbow Rotini pasta
2 c. carrots, cut diagonally
1/2 lb. smoked turkey (about 1/4" - 1/2" slices), cut into strips or chunks
1/2 lb. provolone cheese (about 1/4" - 1/2" slices), cut into strips or chunks

Dressing:
1/2 c. olive oil
1/2 c. rice vinegar, seasoned
1/2 c. vegetable oil
1/2 tsp. salt
1 tsp. oregano, dried
1 bunch green onions, green tops only chopped

Directions:
Directions:
Cook pasta according to package directions and rinse.

Blanch the carrots for 4 minutes then shock in cold water.

Combine the dressing ingredients in a mason jar and shake until combined.

Add pasta, carrots, turkey and provolone in a large bowl. Pour the dressing and mix. Refrigerate for 4-6 hours before serving. Can make additional dressing to mix when serving.

Lasts for several days in the refrigerator. Stir before each serving.
