8 oz. dark chocolate candy coating
4 oz. semisweet chocolate chips or baking squares
2 T. peppermint extract, divided
8 oz. white chocolate candy coating
4 oz. white chocolate, finely chopped
3/4 c. crushed peppermint candies or candy canes

Line a baking sheet with waxed paper.

In the top pan of a double boiler over hot but not boiling water, melt the dark chocolate candy coating and chocolate chips, stirring until smooth. Remove from heat. Stir in one teaspoon of the peppermint extract until well blended.

Pour the chocolate mixture onto the lined baking sheet, spreading into a thin, even layer. Cool about 30 minutes or until the chocolate is firm.

In the top pan of a double boiler over hot but not boiling water, melt the white chocolate candy coating and chopped white chocolate, stirring until smooth. Remove from the heat. Stir in the remaining peppermint extract until well blended.

Pour the white chocolate on top of the dark chocolate layer, spreading evenly. Sprinkle with the crushed peppermint. Cool and break into pieces. Store in an airtight container.
