1 (15-ounce) can black beans, drained and rinsed
1 (15-ounce) cans whole kernel corn, drained
2 cups chunky salsa, divided
2 pounds boneless, skinless chicken breasts

As desired for garnish:
Cheddar cheese, shredded
Sour cream
Tortilla strips

Directions:
Directions:
In a 3 1/2- to a 5-quart slow cooker, combine the black beans, corn, and 1 cup of the salsa.


Top with the chicken breasts and then pour the remaining 1 cup salsa over the chicken.


Cover and cook on high for 2 1/2 to 3 hours, or until the chicken is tender and white throughout. (Do not overcook or the chicken will be dry.) Remove and fork shred the chicken; return to crockpot.

Garnish with cheese, sour cream, or tortillas as desired.

If you’d like to make more hearty, add 2 c. Cooked rice once chicken is shredded and warm throughout.
