2 fat long loaves of French bread
8 oz. bulk pork sausage
8 oz. ground beef (chuck)
1 medium yellow onion, diced
1 egg
1 t Dijon mustard
1/4 cup chopped fresh Italian parsley
1 t fennel seeds
salt and pepper to taste
2 T butter
2 small garlic cloves, crushed

Directions:

Preheat oven to 400 degrees.

Cut off and retain the loaf ends. Hollow out the loaves with your fingers and process the soft bread in food processor with steel blade.

Brown sausage in heavy skillet over medium heat. Add beef and onion, cooking until beef is lightly brown.

Combine bread crumbs, meat mixture, egg, mustard, parsley, fennel, and salt and pepper to taste in a large bowl. Spoon mixture into bread shells, attaching loaf ends with small skewers.

Melt butter over medium heat and stir in garlic, sauté for 30 seconds. Brush loaves with garlic butter and wrap separately in foil. Bake in oven until heated through, 15 to 20 minutes. Cut each loaf into 4 pieces for main-meal portions.
