1/4 tsp cream of tartar
1 1/2 C granulated sugar
2 egg whites
1 1/2 tsp vanilla extract

Mix the sugar, cream of tartar, salt, water, and egg whites in a pyrex or metal mixing bowl.

using the double boiler method, place the bowl over the top of simmering water, making sure that the simmering water does not touch the bottom of the bowl. (If this happens it could cause your frosting to become grainy).

Using a hand mixer, beat the ingredients at low speed, gradually increasing to high, beating until mixture holds stiff peaks, about 7 minutes altogether.
gently stir in the vanilla and spread on cooled prepared cake.

perfect for coconut cake. Make a yellow or white layer cake, use this frosting and press sweetened shredded coconut on top and sides

tip: one recipe I read said you can substitute 1 tbs white corn syrup for the cream of tartar
