3/4 pound wild salmon, skin-on, cut into 3 portions
1 tablespoon white miso
2 tablespoons mirin
1 garlic cloves, crushed and chopped
pinch of ground ginger or 1/4 tsp grated fresh ginger

Directions:

In small bowl, combine miso, mirin, garlic and ginger.

Pour marinade in shallow dish and cover salmon with the marinade, flesh side up for at least a half hour before cooking or overnight.

Preheat oven to broil high. Transfer fish to sheet pan lined with foil. Discard excess marinade.

Place fish on second rack from top and broil 6-8 mins or until fish flakes easily with a fork.

If you wish to serve fish without the skin, carefully slide a fish spatula between the skin and flesh.

We've been lucky to get a salmon share of 10-12 lbs. the last couple years parted into approximately .75 pound fillets. You end up with a lot of salmon in your freezer in September and need to think of creative ways to cook it over the course of the year. This is a simple, but delicious marinade that keeps the fish really moist when it is cooked. Depending on the thickness of your salmon and your personal preferences, you'll find the right cook time for you, but we like it in the 7-8 min range to really ensure doneness without drying out.
