1 French Vanilla cake mix & any ingredients listed on the box.
Heavy Whipping Cream
2 T sugar per each cup of heavy whipping cream
˝ tsp Vanilla for the whipped cream
Raspberry or Strawberry Jam
Strawberries
Powdered sugar as garnish

Directions:
Directions:
Prepare the box cake mix according to package instructions and bake in 2 round cake pans. Cool and remove from pans.

Whip up the heavy whipping cream with 2 Tablespoons sugar per each cup of heavy whipping cream. Add the sugar to the chilled bowl and then the cream and beat until soft peaks form. Add in ˝ teaspoon vanilla. Set aside.


Assemble the sponge. One cake on the platter. Spread the jam on that cake then add whipped cream and strawberries and top with the second layer. Place a huge daub of whipped cream in the center of the second layer and top with strawberries. Garnish with powdered sugar.

Personal Notes: The Victoria Sponge Cake or Victoria Sandwich is a favorite cake at a British Tea traditionally filled with jam and fresh whipped cream.

History: The Duchess of Bedford, one of Queen Victoria’s ladies-in-waiting, would get a sinking feeling about 4pm. She had her servants bring her a pot of tea and a few bread stuffs. She started inviting friends to join her for an afternoon tea at 5pm.
The menu was full of small cakes, bread and butter sandwiches and sweets. This custom spread and even Queen Victoria began to hold tea parties. The simple cake was one of the queen's favorites and it was eventually named after her.
