1 box lemon cake box
2 cans mandarin oranges, (11 oz ea) (1 with juice, 1 without juice)
4 eggs
1/2 cup vegetable oil

TOPPING:
20 oz can crushed pineapple (with juice)
9 oz tub Cool Whip
3 oz box instant lemon pudding

Preheat oven to 350º

Butter and flour 13x9x2 baking dish, or two 9” round cake pans

Beat all cake ingredients together until fluffy. Pour into prepared pan/s.

Bake for 20 minutes or until toothpick inserted in center removes clean.

Cool cake completely.

Fold topping ingredients together until completely incorporated. Add topping to cooled cake and refrigerate until set.
