BAKED MONTEREY CHICKEN Recipe

PREHEAT OVEN 450 DEGREES SERVES 6
6 boneless, skinless chicken breast halves
Olive oil
Salt and pepper to taste
½ cup BBQ sauce
½ cup Monterey Jack cheese shredded
½ cup cheddar cheese shredded
6 slices bacon, cooked /chopped
2 roma tomatoes, chopped
3 green onions

Directions:
Directions:
Place chicken breasts in single layer in large baking dish. Brush both sides of chicken with olive oil. Season with salt and pepper. Bake 10 minutes (I bake a little longer, depending on thickness). Remove chicken, brush tops and sides of chicken with BBQ sauce. Return to oven for 5 minutes. Remove chicken, sprinkle both kinds of cheese evenly over top, evenly sprinkle bacon on top. Return to oven for 3-5 minutes or until the cheese is melted and chicken is no longer pink. Remove chicken and top with tomatoes and green onions. Loosely cover with aluminum foil and let chicken rest for 5 minutes. If I have fresh Pico de Gallo, I spread that on top, instead of tomatoes/green onions.

This is a new recipe I found, but I have served it to relatives, and they all like it. It is both easy and good!
