2 cups granulated sugar
12 T butter (at room temp), cut into pieces
1 cup heavy cream (at room temp)
1/2 T sea salt (optional)

Directions:
In a 2-3 qt saucepan, add sugar and heat over medium heat until it melts and liquifies. (Do not stir). Occasionally swirl the pan a bit, but mostly just let it melt.

Once melted, watch it like a hawk. As soon as it turns amber in color, add butter pieces and whisk. It will bubble vigorously. Keep whisking until melted.

Remove from heat and add cream, whisking until incorporated. It will bubble aggressively, again, so stand your ground and be careful. Whisk in salt.

Cool 15 minutes and pour into a mason jar. Refrigerate up to 2 weeks.
