2 cups buttermilk
2 eggs
1 tsp paprika
1 tsp hot sauce
1 tsp salt
1 tsp pepper
2 tsp baking powder
1 1/2 tsp baking soda
2 cups flour
Vegetable oil for frying

Directions:

Rinse chicken in cold water and pat dry with paper towels. Set aside.

In a large bowl add the buttermilk, eggs, paprika, hot sauce, salt, pepper and mix until combined. Whisk in the baking powder and baking soda.

Measure the flour into a shallow dish for dredging.

Start by dredging a piece of chicken in the flour, coating all sides. Then dip in the buttermilk mixture. Then flour again. Place the chicken on a rack. Repeat until all chicken has been covered. If flour becomes too clumpy, toss it out and get fresh flour.

Add at least 1” oil to a Dutch oven or high walled skillet. Heat to med-high until oil reaches 350º. It should take about 10 minutes.

Once the oil is hot, carefully put in a few pieces at a time using tongs. Fry on one side for about 7 minutes, then flip and fry back side for 3-5 minutes.

Transfer chicken to a plate lined with paper towels. Cool before serving.

Chicken is done when internal temp is 165º. Frying usually tales 12-15 min per batch. If oil get below 2” mark, add oil and bring back heat to 350 before adding more chicken.

Chicken will be crispy on the outside and tender and juicy on the inside.
