Ingredients: 1 quart fresh raspberries ¾ to 1¼ c. sugar (very finely granulated if possible) 2 to 3 TBSP kirsch, cognac or lemon juice

Directions:Hull, wash, drain and sieve the fruit. Add sugar to taste. Either whip for 2-3 minutes in a blender or beat for 10 minutes with an electric beater. The sugar should dissolve completely; the purée will be quite think. Beat in kirsch, cognac or lemon juice. |

Notes: The movie Julie & Julia came out in 2009 and Amelia, knowing I loved the movie, bought me the iconic Julia Child cookbook for a Christmas gift that year. A few days before Christmas we were in Barnes and Nobles and I saw the book on the shelf and made some snarky comment like "Don't get me that for Christmas, those recipes are too hard" only to look over at my beautiful 13 year old daughter to see her wounded and fighting tears. Never have I wanted to eat my words so badly! Luckily she gave me the book anyways and I have since treasured it and love her thoughtfulness and tender heart. We have made a few incredible dishes from the book including this one at Christmas 2017 to top a cheesecake. For my birthday in 2021 Jackson and Amelia made Julia's Coq Au Vin...it was magnificent and a gesture I will always remember!
