Blackberry Pie Recipe

6 c blackberries, cleaned and drained
1 c sugar
3-4 T quick-cooking tapioca
1/2 tsp cinnamon
1/4 tsp nutmeg
1 T lemon juice
3 T blackberry-flavored liqueur or brandy, optional
Pastry dough for double-crust, 9 inches

Directions:

Clean and rinse blackberries, drain and dry on absorbent towels.

In a large bowl, stir together sugar, tapioca, cinnamon, and nutmeg. Add berries, lemon juice and liqueur; mix gently. Let stand for 15 minutes or up to 1 hour to soften tapioca, stirring gently now and then.

Place first pie dough in the bottom of the plate and press into place. Fill with berry mixture. Place second pie crust on top. Fold top pie crust under the bottom and press into place on the edge of the pie plate, press edges with a fork to seal. Cut vents into the top crust, so steam can escape.

Set pie on a foil lined baking sheet. Bake at 400º on the lowest rack for 55-60 minutes or until pastry is golden brown and bubbly. Place strips of foil around the edges if browning to quickly.

Serve warm with vanilla ice cream. Heaven on Earth delicious!
