1 - 9 inch pie crust

Pie Filling:
6 large baking apples, peeled, cored and sliced 1/2 inch thick
1 c sugar
2 T flour
1/2 tsp cinnamon
1/4 tsp nutmeg
1 large egg
1 c heavy whipping cream
1 tsp vanilla

Streusel:
1 stick, cold butter, cubes
1/2 c sugar
1/2 c brown sugar
1/2 c flour
1 tsp cinnamon
1/2 tsp ground ginger
1/2 tsp kosher salt

Directions:

Preheat oven to 350º. Press pie crust into the bottom of a pie plate.

Prepare Streusel topping. Combine brown sugar, sugar, 1/2 c flour. 1 teaspoon each; cinnamon, ginger, salt and cubed butter. Mix with clean fingers or pastry blender until crumbly. Set aside.
Mix 1 c sugar, 2 tablespoons flour, 1/2 tsp cinnamon and 1/4 teaspoon nutmeg in a bowl. Set aside.

Beat eggs, heavy cream, vanilla in a large bowl until well blended. Add sugar mixture to egg mixture and whisk to blend. Evenly distribute apple slices around pie crust. Pour liquid mixture over the apples until pie shell is 3/4 full.

Place pie on a baking sheet and bake for 18-20 minutes. Remove from oven and evenly spread streusel mixture over the top of the pie. Return to oven and bake and additional 45-50 minutes.

Set pie on a wire rack to cool before slicing.
