Ingredients: 10 Oreos, finely crushed 2 TBSP melted butter 2 8oz packages of cream cheese 1/2 c. sugar 2 eggs 1 tsp instant coffee 2 tsp water 1 pkg Baker's Semi-Sweet Chocolate, melted, cooled 1 1/8 tsp unsweetened cocoa powder, divided 1 cup Cool Whip 24 chocolate-covered coffee beans

Directions:Heat oven to 350º. Mix cookie crumbs and butter, press about 1 TBSP onto bottom of each of 12 foil-lined muffin cups. Bake for 8 minutes. Beat cream cheese and sugar until blended. Add eggs, beat just until blended. Dissolve coffee in water. Add to batter until blended. Spoon about 1/4 c. batter into each cup. Bake 23-25 minutes until centers are almost set. Cool completely. Add tsp cocoa powder to Cool Whip, stir gently until blended. Spoon into pastry bag with decorative tip and pipe on to cheesecakes. Garnish with remaining cocoa and coffee beans. |
