Preheat oven to 400
2 tbsp olive oil
2 pounds lean ground beef
2 medium onions, chopped
2 ribs celery, finely chopped
2 medium carrots, finely chopped
2 fresh bay leaves
1 tbsp minced garlic
1/4 cup worcestershire sauce
3 tbsp butter
2 rounded tbsp flour
1/2 cup apple cider vinegar
2 cups beef stock
2 cups shredded sharp cheddar cheese
1 bag frozen tater tots
Directions:
Directions:
In a large skillet, over a medium-high heat, heat olive oil
Add beef and brown well
add onions, carrots, celery, garlic, bay leaves, season with salt and pepper
Cook to soften vegetables, 10-12 minutes
Stir in worcestershire sauce, reduce and simmer
In a small skillet, melt butter over a medium heat, whisk in flour, cook 1 minute, then whisk in cider, reduce by half then whisk in stock and thicken to a loose gravy
Place meat and vegetables in a casserole dish and stir in gravy mix
Top with cheddar cheese and tater tots
Bake until tots are golden and crispy on top
