1 tsp olive oil
pinch of chopped garlic
1 cup firmly packed baby spinach leaves
salt and freshly ground pepper, to taste
2 eggs, lightly beaten with 1 tsp. water
¼ cup crumbled feta cheese

Directions:
Directions:
In a rolled omelette pan over medium heat, warm oil, add garlic and saute, stirring, 1-2 minutes. Add spinach, salt and pepper; saute, stirring, until tender, 2-3 minutes. Add eggs and cook, lifting edges up and tilting pan to let uncooked egg run underneath, 2-3 minutes more. Sprinkle cheese over omelette and roll it away from you, enclosing filling. Roll omelette out onto a plate.
