Grapefruit peels, cut into pieces
2½ cups granulated sugar
More sugar for finishing

In a non-reactive heavy-bottomed Dutch oven, cover the grapefruit peels with water. Bring to a rolling boil. After water boils, drain peels in colander and return to pan. Cover with fresh water and repeat process three more times. This takes the bitterness out of the peels.
After fourth boil, return to pan, add sugar and cover with fresh water by 1-inch. Place over low heat and simmer for 2 hours. Let cool for a few minutes. Remove the peels one by one with tongs and place on a rack or waxed paper to dry for 24 hours. Be sure the peels are not touching each other. After 24 hours, place about 1 cup of sugar in a large ziplock bag and add a few peels at a time and shake to cover with sugar. Store in an airtight container at room temperature for up to 3 days.
