Breaded Artichoke Hearts Recipe

one large jar of artichoke hearts in water (33 oz.)
flour for coating
1 - 2 eggs
2 tbsp. grated Parmigiano, Pecorino or Locatelli cheese
salt and pepper to taste
Italian breadcrumbs for coating
dried thyme (to taste)
dried parsley (to taste)
garlic salt (to taste)
oil for deep frying

Note: you can use frozen artichoke hearts - defrost and drain well before using

1. Drain the artichoke hearts into a colander, then gently squeeze the water out of them.
2. Beat the egg with the grated cheese and pinch of salt and pepper. (use an electric hand mixer if you have one)
3. Place some flour into a low rimmed bowl, put the beaten egg mixture next to it and in a third bowl, place some breadcrumbs mixed with a sprinkle of parsley thyme, salt and pepper. so you have three bowls lined up - flour, egg, breadcrumbs.
4. Begin to dip each artichoke heart first into the flour, then the egg and then thoroughly coat with breadcrumbs. Place on a plate.
5. Heat your oil - but not too hot to avoid burning them - medium heat. When the oil is hot enough, slowly begin placing the artichoke hearts into the oil and fry until golden brown.
6. Place on paper towel lined dish to drain the oil. Serve hot as an appetizer or side dish.

This is one of our favorite recipes and we make it often during the holidays. Not only do people like it but it is my way of gently getting people out of my kitchen so I can prepare the rest of the meal. I usually find a grandchild that can walk around with napkins and a horseradish dip and my family just loves it.

There is an alternative to this recipe - instead of putting the cheese in the egg, we add it to the breadcrumbs and if your family likes more cheese, don't be afraid to add more - I do. Either way, the recipe will be wonderful and your family will love it.

You can use this breading and frying recipe for cauliflower or almost any vegetable. Enjoy!
