CRUST

2 1/2 cups pastry flour
8 oz pkg. cream cheese
1 cup shortening
pinch of salt
(can also substitute for pre-made pastry crust)

CREAM CHEESE TOPPING

16 oz. cream cheese
2 eggs
1 cup sugar
1 Tbsp. pure vanilla extract
1 cup powdered sugar
1 Tbsp melted butter
FRUIT FILLING Prepared fruit filling can be canned or homemade, such as pie filling, or fruit preserves

Directions:
1. Preheat oven to 350º
2. Mix crust ingredients as you would pie dough.
3. Spray muffin tins with cooking spray. Make crusts on the bottom and up inside edges, about an inch to form a cup.
4. Mix "top with" ingredients, except for fruit filling.
5. Put 1 Tbsp. of fruit filling in each crust, topped with 2 Tbsp. of Cream Cheese Topping.
6. Bake 350 degrees for 20 to 30 minutes or until topping is golden brown.
6. Serve room temperature.
