3 eggs
1 c sugar
1/2 t grated cardamom
1 1/3 c flour
dash of salt
1 c whipped cream (the kind you have to whip)

Beat eggs until light. Add sugar gradually, beating until thick and lemon colored. Stir in cardamom spice. Sift together flour and salt, blend into egg mixture alternately with cream. Bake on moderately hot Krumkaka iron (I bought mine in a Norwegian store in Stoughton, Wisconsin). Place 1 T batter just off center on back half of iron. Bring the top of iron down gently, then press firmly. Bake 30 seconds on each side until lightly browned. Roll on cone shape or on broom handle shape. Store in tin container and not plastic container to maintain crispiness.

My Mom, Sharon Ann McFarland Marshall, has made this for our family every December since I can remember. It is a Norwegian celebration that my Mom chose to keep alive. They are like cones but are eaten as cookies.
