1 cup brown sugar
1 cup sugar
4 eggs
1 1/2 cups vegetable oil
3 cups flour
2 tsp. baking powder
1 1/2 tsp. baking soda
1/4 tsp. salt
1/4 tsp. allspice
2 tsp. cinnamon
4 cups shredded carrots

Cream Cheese Frosting:

1/2 cup (1 stick) unsalted butter softened
8 oz. cream cheese softened (brick-style, not spreadable)
2 tsp. vanilla extract
1/4 tsp. salt
4 cups powdered sugar

Directions:
Mix sugars, eggs, and oil for a good two minutes. Sift the dry ingredients and add to the wet ingredients scraping well on the sides and bottom of the bowl. Grease and flour two 9" circular pans and split batter between the two. Bake at 350 for around 40 minutes or until knife comes out clean. Cool. Frost layers with cream cheese frosting. You could cut each layer horizontally to make four layers if you are that adept with a knife.

For frosting: Combine butter and cream cheese in the bowl of a stand mixer (or you may use an electric mixer) and beat until creamy, well-combined, and lump-free.
Add vanilla extract and salt and stir well to combine.
With mixer on low, gradually add powdered sugar until completely combined.
Use to frost completely cooled cake or cupcakes.
