2 cups shredded zucchini
3 eggs
2 cups sugar
3/4 cup vegetable oil
2 teaspoons vanilla
2 cups flour
2/3 cup unsweetened cocoa powder
1 teaspoon soda
1 teaspoon salt
1/2 teaspoon baking powder
Directions:
Directions:
Preheat oven to 325ºF. Line 24 muffin cups with paper liners. In large bowl mix together zucchini, eggs, sugar, oil and vanilla. Add dry ingredients and stir until incorporated. Spoon into prepared muffin tins, filling about half full and bake for 25 minutes or until toothpick comes out clean. Cool on wire rack. Great served with Chocolate Cream Cheese Frosting.
