2 Tablespoons extra virgin olive oil
1 pound sweet Italian sausage
1 onion, sliced
1 sweet red pepper, sliced
2 cloves garlic, finely chopped
1/2 teaspoon cayenne pepper
1 pound Yukon gold potatoes
Salt to taste
Pepper to taste
4 Hoagie rolls

Directions:
Wash potatoes and put whole potatoes in saucepan cover with cold water, add 1 teaspoon salt. Boil until tender, soft when pierced with fork. Drain and set aside, when cool enough to handle, slice potatoes. In large fry pan cook sausage in oil over medium heat until browned, about 8 minutes. Transfer sausage to paper towel lined plate using a slotted spoon. Using the same pan cook onions, peppers, garlic and cayenne pepper until soft, about 5 minutes. Add sausage and potatoes to onion mixture. Season with salt and pepper, mix well. Cook for 5 minutes. Serve on Hoagie rolls.
