1 lb. ground beef
1/2 onion, minced and caramelized in butter
3 t. Sugar
1½ t. Salt
2 T. Paprika
½ t. Oregano, fine
½ t. Red Pepper Flakes
3 T. Green Olive Juice
3 T. Pickled Jalapeño Juice
Split Green Olives
1 or 2 Minced Hardboiled Egg

Directions:
Mince onion. Cook onion in butter until completely caramelized (about 20-25 minutes) remove from pan.
Cook ground beef until well browned.
Return caramelized onion to the pan. Season meat and onion with sugar, salt, paprika, oregano and red chili flakes, mix well. Add in Olive juice and jalapeño juice and mix well.

Allow to cool before filling empanadas.
Temper empanadas wrappers in fridge until defrosted .
Remove from fridge and keep covered before and after working with them. Using fingertips, coat the edges of the wrappers with water. Add about 2 T. of cooled filing to the wrapper, sprinkle with hard boiled eggs and split olives. Fold over and press to seal. Roll edges over and press with a fork to seal. Cover with plastic wrap until ready to fry.

Fry in 350º Oil until golden brown. Drain on paper towels.
