Follow the recipe for Pinto Beans. While the beans are still cooking, prepare the following:

˝ pound bacon
1 medium onion (chopped)
2 lge or 3 med tomatoes (chopped)
2 – 4 serrano chiles, finely chopped
(Use as few or as many as you like for heat)
2 cloves garlic, minced
Bunch of Cilantro (coarsely chopped)

Cut the bacon into small pieces and fry until crisp. After the bacon is cooked, add the onion and sauté until onion is translucent. Add the garlic and give it all a quick stir. Then add the tomatoes and chiles. After all this has cooked for about two minutes, add the cilantro. Cook for a minute or two. About ˝ an hour before the beans are cooked, add this to the pot of beans – yummy!!
