The Dressing
1/2 C red currant jelly
3 T balsamic vinegar
(melt these two together in a saucepan - slowly - serve slightly warm when ready to serve)

6 C baby spinach
2 pints of fresh strawberries
1 C mandarin oranges
1/2 med red onion, thinly sliced
1/2 C Crumbled Blue Cheese
1/2 C Toasted Pine Nuts - (roast in a small frying pan with a little butter - cool)
Directions:

Mix all the ingredients in a pretty salad bowl.

Before serving, add warm dressing.
