Notes: I made this for Erin and Mike's bridal shower in July in Naperville. We had gone out to dinner in Houston in April and had a Mexican Chocolate Cake that Erin really liked and was wondering if there was a way to take it to Costa Rica for a wedding cake. This did not seem practical, so I started looking for a recipe that sounded similar to what was served at the restaurant that we could have at the shower instead and came up with this one. It might not be exactly the same, but we thought it was pretty good! We even served it with cinnamon-coffee ice cream like they did at the restaurant.
