Ten ounces semi-sweet chocolate chips
7 tbsp. unsalted butter, cut into pieces
5 large eggs, room temperature
1 cup sugar
½ tsp. cinnamon
¾ teaspoon chipotle chili powder
Dash cayenne pepper
Pinch of salt
Powdered sugar for dusting

Preheat oven to 350º F.
Line the bottom of a 9-1/2 inch springform pan with a circle of parchment paper. Grease the sides and the parchment paper with a non-stick cooking spray.
Melt the chocolate and butter together in a double boiler or the microwave, stirring occasionally until smooth.
Whisk together the eggs and sugar in a large bowl.
Slowly add melted chocolate, salt and spices to the egg mixture, whisking to mix.
Pour into the springform pan and bake for 22-25 minutes or until a toothpick comes out clean.
Cool completely on a wire rack. Dust with powdered sugar

I made this for Erin and Mike's bridal shower in July in Naperville.
We had gone out to dinner in Houston in April and had a Mexican Chocolate Cake that Erin really liked and was wondering if there was a way to take it to Costa Rica for a wedding cake. This did not seem practical, so I started looking for a recipe that sounded similar to what was served at the restaurant that we could have at the shower instead and came up with this one. It might not be exactly the same, but we thought it was pretty good! We even served it with cinnamon-coffee ice cream like they did at the restaurant.
