1/2 cup (1 stick) margarine or butter, melted
1/2 cup canola or corn or vegetable oil
1 3/4 cup sugar
2 eggs
3 cups flour
2 T. Butavan flavoring (or use 2 tsp vanilla and 2 T. melted butter)
1 Tablespoon baking powder
1 teaspoon baking soda
1 c. buttermilk (use 2 T. lemon juice and 7 1/2 oz. regular milk to make one cup of buttermilk)
1 12-oz. or 16-oz. can blueberries with juice (don't drain all the juice--you will need about 1/2 - 3/4 of it)

Combine the melted margarine and oil; stir well, and then mix in the sugar. Then add eggs to the mixture and blend well, and adding Butavan (or melted butter and vanilla) and mix well. Combine the dry ingredients: flour, baking powder, and salt; mix well. Alternate adding the dry ingredients (flour/baking soda/baking powder) with the buttermilk to the oil/sugar/eggs mixture, mixing well with each addition. After all the dry ingredients and buttermilk have been added to the mixture, add the blueberries and mix well again until all the blueberries are incorporated into the mixture.

Using regular muffin tins, spray with non-stick spray and bake in a pre-heated 400-degree oven for 18-20 minutes until light brown on top and around the edges. If you use mini-muffin tins (use non-stick spray first), they won't take as long to bake, so watch closely after 10-12 minutes.

Butavan is a flavoring that is hard to find. If you cannot locate it, use 2 T. melted butter added to 2 tsp. vanilla instead. This recipe is similar to the 50-Yard Line's (restaurant in Lubbock--very popular for MY generation of Red Raiders) recipe for blueberry muffins.
