5-6 medium zucchinis cut ½ inch thick
¾ cup shredded carrots
½ cup chopped onion
2½ cups herbed bread cubes
6 tablespoons butter
1 can cream of chicken soup
½ cup sour cream

Directions:
Directions:
Cook zucchini in boiling salted water - drain. In saucepan cook carrots and onion in 4 tablespoons of butter until tender. Remove from heat. In a bowl mix 1½ cups bread cubes, soup and sour cream. Gently stir in zucchini. Put in 1½ quart casserole pan. Melt remaining butter, add remaining bread cubes. Toss gently and put on top of casserole.

Bake at 350º for 30-40 minutes.
