1 1/2 lb fresh or frozen extra-large shrimp, peeled and deveined
1 T olive oil
2 tsp Cajun seasoning
1/4 cup orange marmalade
1/4 cup honey
1/2 tsp Cajun seasoning
2 cups hot cooked rice

Directions:
Directions:
1. Thaw shrimp, if frozen. If using wooden skewers, soak them in water for 30 minutes before using. Rinse shrimp; pat dry with paper towels.

2. For marinade, in a small bowl, combine oil and 2 tsp Cajun seasoning. Add shrimp, toss to coat. Marinate in the refrigerator for 1 hour.

3. Meanwhile, for the sauce, in a small saucepan, warm the marmalade, honey and 1/2 tsp Cajun seasoning over low heat 2 to 3 minutes or until melted, set aside.

4. Drain shrimp, discarding marinade. Thread shrimp onto skewers, leaving a 1/4-inch space between pieces.

5. For a charcoal grill, place skewers on the greased grill rack directly over medium coals. Grill uncovered for 5 - 7 minutes, or until cooked thru. Turning once halfway through. (For a gas grill, preheat and reduce heat to medium. Place skewers on greased grill rack over heat. Cover; grill as above.)

6. Serve shrimp on skewers with hot cooked rice and drizzle with warm sauce.
