3 pounds pork cushion meat
3 pounds tomatillos peeled of husk
2 tbsp. minced garlic
5-8 sprigs of cilantro
1/4 of a large onion
4-6 habanero peppers
salt to taste

Directions:
Directions:
Cut pork meat into bite size peices, brown them in a fry pan
Place pork in a 7-8 quart slow cooker
Take Tomatillos and plce them in a deep pot with water to cover the tomatillos
Turn stove on high intil the tomatillos are soft and just starting to crack open
With a sloted spoon remove tomatillos, letting water drip and put in a large blender
Cover and turn on high(caution liquid is extremely hot)
Turn off and add 4 habineros and 1/4 onion, cover, blend on high for about 2 minutes
Turn off add minced garlic, cilantro, and salt, cover blend on high for 2 more minutes
Turn off and with a small spoon taste, add more salt if needed and cilantro and habinero pepper if you feel it is not hot enough, only add one pepper at a time, re-blend another two minutes
When it is at your tasting pour over pork meat in slow cooker
Cook on low for 7-8 hours or high for 4-5 hours

Serve with rice, beans, and tortias

Habineros are tricky, only add 3-4 and keep re-tasting, if not hot enough add one more and taste again. I have had to add up to 8 as it depends where the peppers were grown and when they were harvested.

You can also use pork loin, pork butt, as the meat, I try and use whatever pork is on sale, just cut the pork into 1/2 to 1 inch pieces.
