1 ½ Cups Sifted Plain Flour
1 Teaspoon Baking Powder
1 Teaspoon Baking Soda
½ Teaspoon Salt
½ Teaspoon Cinnamon
½ Teaspoon Nutmeg
1 Cup Shredded Carrots
½ Cup Canned Whole Cranberry Sauce
1 Cup Sugar
⅔ Cup Cooking Oil
2 Eggs
½ Cup Sifted Confectioner's Sugar
1 Tablespoon Light Cream

Directions:
Directions:
Sift together flour, baking powder, soda, salt, and spices. Add carrots, cranberry sauce, sugar, oil and eggs. Beat until well blended. Pour into greased and floured 9x9x2 inch pan. Bake in 350º oven for 40 to 45 minutes. Combine confectioner's sugar and cream, drizzle over cake. Top cake with light sprinkling of minced nuts if desired.

For special occasions bake christmas carrot cake in fluted 2 quart mold.
