Salad
2 heads broccoli, cut into small pieces, stems removed
1 apple thinly sliced
¼ c red onion diced
½ cup raisins
½ cup sunflower seeds (roasted and salted)

Dressing
¼ c apple cider vinegar
⅓ c extra virgin olive oil
2 cloves garlic, minced
1 tbs maple syrup (you can use up to 2 tbs, if desired)
½ tsp salt
¼ tsp black pepper
1 avocado, smashed

Directions:
Directions:
Wash broccoli and cut florets from the stalks and set the stalks aside.
Cut the florets into very small pieces, place in a large bowl and add to florets
add raisins, red onion and sunflower seends.

For dressing;
whisk altogether all of the dressing ingredients; add to salad and toss.

My daughter cannot eat eggs, so we tried to find a substitute for mayonnaise. This is creamy, delicious, and a great vegan mayonnaise substitute.
