Tenderloin steaks ( or your favorite cut ) 1 inch thick or more
3-4 tablespoons butter
shallots chopped or sliced (your choice of how many you want)
4 garlic cloves chopped
herbed butter topping
salt and pepper optional

Herbed Butter:
1 stick (1/2 cup) salted Butter at room temperature.
1 Tablespoon each finely minced fresh rosemary and thyme
2 Tablespoons chopped fresh parsley
1 Tablespoon fresh chives chopped
pepper to taste

In a cast iron skillet on medium heat sauté shallots and garlic in butter. After they are tender remove from pan. Put steaks in the pan and cook for about 6-8 minutes per side, according to how rare or done you like them. Add the shallots and onions to steaks and lightly salt and pepper, if desired. Put in 400º oven for about 10 min. Let rest 5 minutes. Top with herbed butter.

For the Herb Butter: Add ingredients to a bowl then stir with a fork to combine. Scoop herb butter onto a sheet of plastic wrap then shape into a log and refrigerate until firm (if time is of the essence you can freeze for 20-30 minutes.) Can be done ahead of time.
