2 cups dried lima beans
2 tsp. salt
½ cup chopped onion
¼ cup chopped green pepper
¼ cup cooking oil
2 cups cooked tomatoes
1 small onion chopped
shredded american cheese
soak dried beans overnight

Directions:
Directions:
Wash beans add 1½ qts. boiling water. Bring to a boil and simmer until tender.(add salt after first hour of cooking) Drain, cook onion and pepper in cooking oil until tender. Add tomatoes and beans. Season to taste with salt and pepper. Pour into casserole with cooked beans, sprinkle with cheese and bake at 350 º for 25 to 30 minutes.
