2 ¼ cup ( 1 lb. ) dried green split peas
8 cups of cold water
16 oz. can tomatoes cut up
½ cup chopped onion
1 cup chopped celery
¼ cup chopped carrots
3 Tbsp. snipped parsley
2 Tbsp. vinegar
1 cove garlic- minced
2 tsp. salt
½ tsp. dried oregano - crushed
6 slices bacon cooked crisp and crumbled.

In a large saucepan combine peas and water. Bring to a boil. Simmer 2 minutes, remove from heat, cover and let stand 1 hour. Add undrained tomatoes, onion, celery, carrots, parsley, vinegar, garlic,salt and oregano. Cover and simmer 2 hours, add bacon and simmer covered 15 minutes or more. Season to taste with salt and pepper.

Makes 8 to 10 servings.
