1 (15oz) can chickpeas, rinsed and drained
3 TBSP tahini
1 tsp. Dijon or spicy brown mustard
1 TBSP maple syrup or agave nectar
1/4 c diced red onion
1/4 c diced celery
1/4 c diced pickle
1 tsp capers, drained and loosely chopped
healthy pinch of sea salt and black pepper
1 TBSP roasted unsalted sunflower seeds (optional)

Directions:
Directions:
Place chickpeas in a mixing bowl and has with a fork, leaving only a few beans whole.

Add tahini, mustard, maple syrup, red onion, celery, pickle, capers, salt and pepper and sunflower seeds to mixing bow. Mix to incorporate. Taste and adjust seasonings as needed
