Dressing:
3 TBSP olive or avocado oil (I use a little less than 1 TBSP and at least 2 TBSP veg. broth or water)
zest from 1 lemon
2 TBSP freshly squeezed lemon juice
2 TBSP fresh parsley, chopped
1/4 tsp sea salt
1/4 tsp ground pepper



Salad:
1 can chickpeas, drained and rinsed
16 grape tomatoes, quartered
2 small cucumbers, sliced and halved
1/4 c chopped red onion
1 small clove garlic, minced

Dressing:

Combine all ingredients in a bowl and whisk to combine.
Combine all salad ingredients. Pour dressing over top and gently toss to evenly coat. Let sit 30 minutes for flavors to combine. Serve at room temperature or straight from refrigerator

Personal Notes:
Would be good with avocado and corn added as well. May need a little more dressing for added ingredients. I think you could accomplish this by just adding a little more oil or broth.
