2 ¾ cups sifted Swans Down Cake flour
3 teaspoons baking powder
¾ teaspoons salt
4 egg whites
½ cup sugar
¾ cup unsalted butter
1 cup sugar
1 cup plus 2 tablespoons milk
1 teaspoon vanilla extract
½ teaspoon almond extract ( or can use butter extract)

Directions:
Directions:
Preheat oven to 350º. Butter/Flour 2-9 inch layer pans.
Sift Swans Down Flour with baking powder and salt.

Beat egg whites until foamy, gradually add ½ cup sugar. Continue beating until soft peaks form. In another bowl ,cream butter. Gradually add 1 cup sugar, beat until fluffy. Add flour mixture alternately with milk, beat until well blended. Add vanilla and almond extract. Fold egg white mixture unto batter by hand. Pour batter into pans.

Bake about 25-30 minutes or until cake springs back. Cool in pan 10 minutes. Remove from pans and finish cooling on racks. Frost with favorite icing.
